RECIPE: Hummus-Crusted Chicken & Chipotle Lime Carrots

November 8 is “Cook Something Bold” Day so we decided to mix some bold flavors and combinations for a delicious meal using our Dippin’ Stix products! Since our trays are single-serve we created a recipe that will serve one (with maybe a bit of leftovers). We hope you’re up for something new and tasty—be bold and try out this recipe.

Hummus-Crusted Chicken & Chipotle Lime Carrots

Ingredients

  • 4 trays of Dippin’ Stix Baby Carrots & Original Hummus
  • 1 boneless, skinless chicken breast
  • 3 Tbsp. butter
  • 2 Tbsp. finely chopped chipotles with adobo sauce (*If you are not familiar with these, they are a bit spicy, but add a great flavor!)
  • 1/2 tsp. cumin
  • 1 tsp. honey
  • 1/4 tsp. salt
  • 1 lime (grated zest & juice)
  • 1 lemon
  • 1/2 tsp. paprika
  • Salt & pepper

1.  Preheat the oven to 450°F. Prepare a baking dish with cooking spray.

2. Pat the chicken breast dry. Place in the baking dish and season with salt & pepper.

3.  Remove the hummus from the 4 Dippin’ Stix trays and finely slice the lemon.

4.  Cover the chicken breast with the hummus and sprinkle paprika on top. Place lemon slices on top of the chicken.

5.  Set the chicken aside. In a small bowl combine the chipotle peppers, cumin, honey and 1/4 tsp. salt. Pour the mixture over the carrots and toss to coat.

6.  Pour the carrots onto a baking sheet with sides and scatter slices of butter on top.

7.  Place both the chicken and carrots into the oven for 25 minutes. Zest the lime and prepare the lime juice.

8. Once the chicken is cooked through and carrots are fork tender, toss the carrots with lime juice and zest.

9.  Serve and enjoy!
