RECIPE: National Great American Pot Pie Day

There’s no better way to kick off Autumn than to begin with National Great American Pot Pie Day! Held every year on September 23, we’ve whipped up an easy and delicious recipe using Dippin’ Stix Celery Stix! Throw this in the crockpot and have something nice & warm for dinner tonight.

What You’ll Need:

  • 1 lb boneless, skinless chicken breasts
  • 1 small onion, diced
  • 3 trays Dippin’ Stix Celery Stix & Peanut Butter; celery stalks, diced
  • Two 10.5-ounce cans Condensed Cream of Chicken Soup
  • 1 cup skim milk
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • ½ tsp salt
  • ½ tsp black pepper
  • 16-oz bag frozen mixed vegetables
  • 2 Tbsp fresh parsley
  • 12-oz can Flaky Biscuits

1. Place chicken breasts in the bottom of the slow cooker.

2. Top the chicken with the diced onions & celery.

3. In a small bowl, combine the chicken soup, milk, garlic powder, thyme, salt & black pepper. Whisk until mixed well. Pour the mixture into the slow cooker.

4. Cover and cook on low for 8 hours, or high for 4 hours.

5. About 30 minutes before serving, remove the chicken from the slow cooker and shred. Place the shredded chicken back into the slow cooker and add the frozen vegetables and parsley. Stir well. Cook for an additional 30 minutes.

6. Bake the biscuits according to package instructions.

7. To serve, fill a small bowl with about 1 cup of the chicken mixture and top with a freshly baked biscuit.
