RECIPE: National Pistachio Day

It’s World Pistachio Day! These little green nuts are packed with more antioxidants per serving than green tea. They are also an excellent source of fiber, copper, manganese, and Vitamin B6.  We thought we’d find a recipe that included this powerful nut into a tasty snack! We found a great recipe from Betty Crocker that we tailored so you can use Dippin’ Stix Sliced Apples & Yogurt Fruit Dip. It was a hit and pretty quick to put together. What You’ll Need:

1 1/2 cups all-purpose flour
3/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup vegetable oil
1/3 cup apple cider or apple juice
2 eggs, beaten
3 trays Dippin’ Stix Sliced Apples & Yogurt Fruit Dip
1/2 cup sweetened dried cranberries
1/3 cup chopped pistachios

1. Heat oven to 350°F. Grease and flour bottom only of 8×4-inch loaf pan. In large bowl, mix flour, granulated sugar, baking powder and salt. Beat in oil, 1/3 cup cider and eggs until smooth. Stir in peeled apple slices, cranberries and 1/3 cup pistachios. Spoon and spread evenly in pan.
2. Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan. Cool completely, about 1 hour 30 minutes. Although we also tried some warm…it was wonderful.
3. Drizzle the yogurt fruit dip over top of bread. Sprinkle with 2 tablespoons of finely chopped pistachios.
