Caramel Mini-Apple Cheesecake Bites

Caramel Apple Mini Cheesecakes with Streusel Topping

Prep Time: 30 minutes
Cook Time: 25 minutes
Yield: 18 mini cheesecakes

Ingredients

Crust

10 graham crackers sheets, finely crushed (1 1/3 cups)
2 1/2 Tbsp granulated sugar
1/4 tsp ground cinnamon
6 Tbsp unsalted butter, melted
Streusel
1/2 cup all-purpose flour
1/4 cup quick oats
1/4 cup + 2 Tbsp packed light-brown sugar
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp salt
1/4 cup unsalted butter, cold and diced into 1/2-inch cubes

Filling

2 (8 oz) pkgs cream cheese, softened
2/3 cup granulated sugar
2 large eggs
1/4 cup sour cream
1 tsp vanilla extract
1 lb granny smith apples, peeled, cored and finely chopped*
2 tsp lemon juice

Topping

Salted caramel sauce, homemade (recipe and tutorial here) or store bought

Directions

For the crust:

Preheat oven to 325 degrees. In a mixing bowl, whisk together graham cracker crumbs, sugar and cinnamon. Pour in butter and using a fork, stir until evenly moistened. Divide mixture among 18 paper lined muffin cups, adding a rounded tablespoon to each cup. Press into an even layer. Bake in preheated oven 5 minutes, then remove from oven and allow to cool.

For the streusel:

In a mixing bowl, whisk together flour, quick oats, brown sugar, cinnamon, nutmeg and salt. Add cold butter and using fingertips, rub butter into dry mixture until it comes together it small crumbles and pieces of butter are no longer visible. Transfer to refrigerator while preparing apples and filling.
For the filling:
In a bowl, toss chopped apples with lemon juice, set aside.
In a mixing bowl, using an electric hand mixer set on medium-low speed, cream together cream cheese with sugar just until smooth. Mix in eggs one at a time, then blend in sour cream and vanilla.

To assemble cheesecakes:

Divide cheesecake batter evenly among 18 muffin cups pouring filing over crust (I used a 1/4 cup and filled it about 3/4 full). Divide apples evenly over cheesecake layer, then finish by sprinkling a heaping tablespoon of the streusel over tops. Bake in preheated oven 23 – 25 minutes. Cool at room temperature 30 minutes, then transfer to fridge and chill 3 hours. Serve with caramel sauce.

*This is about 3 small granny smith apples. I recommend chopping very small so they can cook all the way through, almost mincing them (even smaller than that pictured because mine weren’t quite tender all the way through).

RECIPE: National Great American Pot Pie Day

There’s no better way to kick off Autumn than to begin with National Great American Pot Pie Day! Held every year on September 23, we’ve whipped up an easy and delicious recipe using Dippin’ Stix Celery Stix! Throw this in the crockpot and have something nice & warm for dinner tonight.

What You’ll Need:

  • 1 lb boneless, skinless chicken breasts
  • 1 small onion, diced
  • 3 trays Dippin’ Stix Celery Stix & Peanut Butter; celery stalks, diced
  • Two 10.5-ounce cans Condensed Cream of Chicken Soup
  • 1 cup skim milk
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • ½ tsp salt
  • ½ tsp black pepper
  • 16-oz bag frozen mixed vegetables
  • 2 Tbsp fresh parsley
  • 12-oz can Flaky Biscuits

1. Place chicken breasts in the bottom of the slow cooker.

2. Top the chicken with the diced onions & celery.

3. In a small bowl, combine the chicken soup, milk, garlic powder, thyme, salt & black pepper. Whisk until mixed well. Pour the mixture into the slow cooker.

4. Cover and cook on low for 8 hours, or high for 4 hours.

5. About 30 minutes before serving, remove the chicken from the slow cooker and shred. Place the shredded chicken back into the slow cooker and add the frozen vegetables and parsley. Stir well. Cook for an additional 30 minutes.

6. Bake the biscuits according to package instructions.

7. To serve, fill a small bowl with about 1 cup of the chicken mixture and top with a freshly baked biscuit.

Apple S’mores

Happy Labor Day! Fall activities are on the way and one of our favorite outdoor activities to do before the snow flies here in Minnesota, is to have a bonfire! And you can’t have a bonfire without s’mores! We’ve found a few different recipes that would work great with Dippin’ Stix Apple trays (caramel, peanut butter or peanut butter with chocolate). Savory Dinner with Apples

We found this recipe at Good Life Eats that uses apples in a sweet and savory pork chop recipe. Using 8 trays of Dippin’ Stix Sweet Gala Apples & Caramel, you could substitute out the recipe’s apples, butter & brown sugar. As fall is around corner and warm, savory meals abound, let us know if you try this recipe & how you like it!

Apple Cider Sage Pork Chops with Caramelized Apples

YIELD: serves 4 – 6

Ingredients:

4 bone-in pork loin chops
2 Garlic Herb Sauté Express® Sauté Starter squares
1–2 tablespoons fresh sage chopped, according to preference
1 pound apples (I used Pink Lady) peeled, cored and sliced in ¼-inch slices
3 tablespoons butter
4 tablespoons brown sugar
1/2 cup apple cider
1/3 cup heavy cream
salt and pepper, to taste

Directions:

In a large sauté pan or cast iron skillet, melt the Sauté Express® Sauté Starter over medium heat until it begins to bubble. Pat the pork chops dry on both sides. Add the meat and cook for 3–5 minutes, or until browned. Turn and cook the other side until browned and the pork is cooked through (minimum internal temperature of 145 degrees F). While cooking, brush some of the Sauté Express® Sauté Starter on the side of the pork facing up.

In another skillet melt the butter over medium heat. Add the sugar to the butter and cook for 1 minute, or until it begins to melt. Add the apples and sauté over medium heat until the apples are browned and tender. This should take about 10–15 minutes.

In the pan with the pork chops, add the apple cider and cook over medium heat until the liquid is reduced by about half. Add the cream, bring to a boil and allow it to bubble for a few minutes until the sauce is slightly thickened. Sprinkle with fresh sage and season with salt and pepper if desired.

If serving immediately, spoon the caramelized apples on top of the pork in the pan. Alternatively, you can pass the apples separately at the table and portion them out directly on the dinner plates.

RECIPE: Apple Peanut Butter Sandwiches on a Stick

Dippin’ Stix are manufactured in Minnesota and the world-renowned Minnesota State Fair starts today. The MN State Fair is famous for food “on-a-stick” such as “Cheese-on-a-stick” or “Walleye-on-a-stick” and even a Minnesota classic “Hotdish-on-a-stick,” so we thought it would be fun to do our own version of something-on-a-stick to celebrate our great state fair!

What You’ll Need:
5 trays of Dippin’ Stix Sliced Apples & Peanut Butter
6 slices of bread
Toothpicks

1. Spread the peanut butter on to each slice of bread. Determine how large you want your sandwiches to be and slice the bread & apples accordingly. We ended up cutting our bread into diagonal quarters and leaving the apple slices intact.

2. Assemble the sandwiches and stick a toothpick through to hold together. Enjoy these tasty little Sandwiches-on-a-Stick!
